When aspiring to eat organic food it is definitely economical to buy in bulk! The challenge in this however, is that food could go bad if it is not eaten in a timely manner. When I went to Publix the other day, buying the 25lb load of carrots was appealing to me because it was $15. I just had to come up with ways of how this crazy amount of carrots would get consumed- solo. And no, I do not have a bunny. Although a guy in the store pointed and laughed at me and said, “You must have a rabbit, huh?!” Nod and smile, nod and smile…
Although it is more ideal to immediately consume juice right after it is made, sometimes preparing in advance is really practical. Check out these pictures of different ways to consume carrots. I made some great frozen treats that will be very refreshing during the day. I imagine that these would probably be great for kids. I ended up with three bags of pulp. I kept one for myself and shared the others with friends. There is no sense in wasting this good organic, fibrous food. I really like sprinkling the pulp over salad. It can also add a nice texture to other meals like soups, spaghetti, etc. Some leftover juice will be good for today’s juice or smoothie. I ended up using about a good 1/3 of the carrots. I’ll be creating some more treats this weekend.
If I turn orange, I’ll be sure to post a picture. :) And yes, sometimes I do feel like a bunny.

Priscilla’s Classic Smoothie – Supercharge your body, mind and soul!
Preparing a highly nutritious smoothie is an excellent way to start your day. It can also be a great meal/snack at any other time. It is so easy to jam pack some mega nutrition with fresh fruits and veggies, greens especially.
Here is a super simple, tasty and easy recipe. It’s my classic, go-to green smoothie and is wonderful for everyone:
Banana, Spinach, Cinnamon
Today I used: 2 ripe bananas, 1 big handful of spinach, a few dashes of cinnamon. Blend this up with about 8-10oz of water.
Enjoy and drink slowly! Peace!
Student Midwife Fundraiser
I have been very blessed to be able to fund my education and expenses as a student midwife thus far. As many of you know, a student midwife is not monetarily reimbursed. I have chosen to not work an outside regular job so that I can make myself available 24/7 and lead the “on-call” lifestyle.
This fund is being set-up to contribute to expenses that are entailed in being a student midwife. Some of these include: tuition, gas, tolls, books, materials.
My intention is to continue to have financial peace of mind so that I may continue to be available 24/7 to families, midwives and birth community.
